Asparagus Bean

The origin of the asparagus bean, also called Yardlong bean, is South Asia probably. Main cultivating areas are: India, China, Indonesia, East, West and Central Africa and California.
Description:
The asparagus bean is the fruit of a climbing annual. The long, string-like pods reach lengths between 30-90cm and have a diameter of just 1cm. Within the pod, 10-30 white, brown or red edible seeds are found. The nutritional value of this vegetable is relatively high: 55% carbohydrates and 24% protein. The bean has a pleasantly mild taste and is somewhat sweeter than the 'normal' garden bean.
Marketing :
The fruits are available all year long. Shelf-life and storage times are equivalent to bush and pole beans.
Use:
They are used like 'regular' beans.
