Horseradish

The horseradish came originally from East and South Europe. Today it is cultivated mostly in Poland, Hungary, Russia and the US.
Description:
The perennial plant of the horseradish grows up to 1m high and is mainly cultivated for its deeply seated root. The root grows to a length of 30-40 cm, with 4-6cm thickness and a yellow to light brown rind. The inner flesh is white. Main components are: carbohydrates, also minerals and vitamins, as well as volatile sulphuric oils which are responsible for the typical sharp taste. Horseradish also contains antibiotic substances and is considered having positive effects on lack of appetite, blood circulation and blood supply, and hypertension.
Marketing :
The vegetable is offered year round and can be stored well; approx. 4 weeks in the refrigerator, up to 12 months in cold storage at 0 – 1° .
Use:
Raw shredded horseradish is used as salad and sauce enhancer, its heat reduced by mixing it, and it may be canned.
