Jalapeno

Jalapenos which are named after a Mexican town, are cultivated mostly in Mexico and the US, where these fruits are very much liked.
Description:
Jalapenos are the fruits of a 75cm high shrub. If the heat of all chilli varieties is measured between 1 and 10, the jalapeno takes the golden mean at 5. The green and red, when fully ripe, fruits are 6-8cm long and heavy fleshed. The flattened tip is typical for this variety. Red, fully ripe peppers are more aromatic than green ones. During the ripening process, jalapenos exhibit black spots which however disappear during the colour change. The little tears which look like cork pattern occurring in ripe fruits, are also typical for this chilli.
Marketing :
The jalapeno is always available and may keep for approx. 14 days at 7 – 10° .
Use:
The spice gains popularity in Europe. When sliced, it seasons piquant but also hot dishes such as side orders to nachos. Another use is to stuff the peppers with cream cheese or cheddar, bread them and bake or fry them. This dish is called 'popper' and is offered as appetizer in American or Mexican restaurants. Due to their fleshiness, jalapenos are not suitable for drying.
