Passion Fruits:
- „purple granadilla“

Description:
The most important variety of the passion fruit for the European market is the „purple granadilla“ (sold under the name passion fruit), cultivated in tropical heights and in the Subtropics (e.g. Australia, Kenya, Zimbabwe, South Africa). The fruit is round to roundish oval and has a diameter of 3.5 - 5 cm. During the ripening process, the fruit changes from greenish brown to purple violet. The orange yellow pulp has the most elegant and balanced aroma and it is eaten preferably fresh. South Africa also supplies a hybrid (cross) between the purple granadilla and the sweet granadilla, which looks similar to the purple granadilla, however it is larger and the skin shrivels less quickly.
Use of passion fruits
When eaten raw, the fruit is halved and spooned out, possibly under addition of sugar or cream. The seeds may be eaten or removed by passing the fruit through a sieve. The pulp is also used in fruit salads, ice cream, cottage cheese dishes, jams and jellies, custards, but mainly in the preparation of juices and concentrates. If boiled with sugar and subsequently passed through a sieve, the pulp makes a lovely fruit sauce. It is also required for a very popular mixed drink, the „Maipirinha“: The pulp is mixed with cane sugar and sugar cane liqueur and served on the rocks.
